Southern-Style Green Beans & Potatoes

Directions:
Wash and trim the green beans, then cut them into 2-inch pieces; set aside.
Cut the bacon into 1/2-inch pieces and sauté over medium heat in a large pot or Dutch oven until very crispy.
Add onions to the bacon and continue to sauté for 2-3 minutes. Turn off the heat.
Cut the potatoes into cubes and add them to the pot. Add chicken broth (just enough to cover the potatoes), butter, salt, and pepper, then bring to a boil.
Add the prepared green beans on top of the potatoes (don’t stir).
Cover the pot, reduce heat to medium-low, and cook for 10 minutes. Stir the beans into the potatoes and continue cooking for 20-30 minutes or until the potatoes and beans are tender and flavorful.
