Sacher cake: a few simple steps to make it perfect!

INGREDIENTS :
125 g (0.5 cup) butter at room temperature
100 g (0.8 cup) powdered sugar
10g (1 tbsp) honey
125 g (1.2 cups) melted dark chocolate
5-6 egg whites
7 egg yolks
110 g (0.5 cup) sugar
125g (1 cup) flour 00

To coat the bark:
550 g (1.6 cups) light apricot jam

Icing:
200g (2 cups) dark chocolate
200 g (0.8 cup) fresh liquid sour cream
30g (2 tbsp) butter
