Baked Mexican cheese dip

Such a simple dip you can make any time. This is known as “The Dip” in our house because it has been a staple since I was a kid!

Ingredients:

1 cup cream cheese, softened

1 cup sour cream

1 tablespoon taco seasoning

1 cup salsa

1 cup black beans, drained and rinsed

1 cup corn kernels, drained

1 cup green chilies, diced

2 cups cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

Fresh cilantro, chopped, for garnish

Tortilla chips, for serving

Preheat oven to 375°F (190°C).

In a large bowl, mix cream cheese, sour cream, and taco seasoning until smooth.

Stir in salsa, black beans, corn, and green chilies.

Layer half of the mixture in a baking dish.

Sprinkle with half of the cheddar and Monterey Jack cheese.

Repeat layers.

Bake for 20-25 minutes, until bubbly and golden.

Garnish with chopped cilantro.

Serve warm with tortilla chips.
